Honey is the subject, not the sweetener. Seven creations, seven single-origin honeys — from transparent acacia to near-black pine honeydew. The honey decides the form. Nothing is added the honey would not ask for. Chocolate, meringue, mousse, sponge — only instruments through which the terroir of one apiarist, one field, one slope is revealed.
